Pre-covid, we had Sibelius in the classroom and I got it put on my laptop and I have to say, I find some aspects of it great, and others mind-numbingly irritating (why can't I re-size the fucking on-screen numeric keypad please.). I will say, if I'm going for something really professional, and especially if it has the need for a lot of tweaking of details, I'd use Finale, hands down. But you can make a shit score in Sibelius too if you don't know what you're doing (and plenty do). The biggest problem is, it's used mostly by non-professionals who don't know what they're doing. There is nothing "unprofessional" of its output. I'm teaching a notation class right now on MS and we did a piano score at the beginning of the semester that could easily be found in any modern collection of piano pieces. So the correct answer is to be as fluent in each as you can, and to understand concepts you can carry from one to the other. They may want you to send them a Sibelius file so they can edit it.
